Ingredients
Carrot cake
- 1 1/2 cups sugar
- 1 cup vegetable oil
- 3 egg
- 2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 3 cups, grated carrot
- 1 cup, chopped walnuts
Cream cheese frosting
- 8 ounces, softened cream cheese
- 1/4 cup butter
- 3 teaspoons milk
- 1 teaspoon vanilla
- 4 cups powder sugar

Step 1
Preheat oven to 350. Grease, and flour bottom and sides, of 13 x 9 inch baking dish.
Step 2
In large bowl, beat sugar, oil, and eggs on low speed until well blended.
Step 3
Add flour, cinnamon, baking soda, 1 teaspoon vanilla, and salt, mix well.
Step 4
Fold in carrots and nuts until well blended. Pour into pan. Bake for 40 to 45 minutes, or until toothpick inserted in center comes out clean.
Step 5
Cool completely before frosting.
Frosting Step 1
In medium bowl beat cream cheese, butter, milk, and vanilla on low speed, until smooth.
Frosting Step 2
Gradually beat in powder sugar, 1 cup at a time, on low speed, until smooth and spreadable.
Step 6
Once cake is cooled completely frost cake. Store cake in fridge.
