Ingredients
Muffin
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 2 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup blueberries
Streusel Topping
- 1/4 cup flour
- 1/4 cup, packed brown sugar
- 1/4 teaspoon cinnamon
- 2 tablespoons butter

Step 1
Preheat oven to 400. Either grease bottom muffin pan, or line with muffin cups.
Step 2
In a large bowl, mix together milk, egg, and oil. Stir in flour, sugar, baking powder and salt, just until flour is moistened.
Step 3
Gently fold in blueberries.
Step 4
Spoon batter evenly into each muffin cup.
Step 5
Make streusel. Mix four, brown sugar, and cinnamon together in a small bowl. Cut in the butter, until crumbly.
Step 6
Add a tablespoon of streusel topping to each muffin cup.
Step 7
Bake 20 to 25 minutes or until golden brown. Allow to cool for about 5 minutes before serving.
