Ingredients
- 1 1/4 cups sugar
- 1/2 cup, softened butter
- 2 egg
- 1 1/2 cups, mashed banana
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup, chopped walnut

Step 1
Preheat oven to 350. Grease bottom and sides of two loaf pans.
Step 2
In large bowl, mix together butter and sugar. Add eggs until well blended.
Step 3
Stir in mashed overripe bananas, buttermilk, and vanilla. Beat until smooth.
Step 4
Mix in flour, baking soda, and salt until moistened. Fold in nuts, nuts are optional.
Step 5
Pour batter equally into loaf pans. Bake 8 inch loaves about 1 hour, or until toothpick inserted in middle comes out clean.
Step 6
Allow to cool for 10 minutes in pan. Remove from pans and allow to cool completely, to allow for slicing.
Step 7
Wrap tightly and store at room temperature for up to 4 days, or in fridge for up to 10 days.
