- 1 pound boneless skinless chicken breasts
- 1, sliced green pepper
- 1, sliced red pepper
- 1, sliced onion
- 8 flour tortillas
- 2 cups, grated cheddar cheese

- 1/4 cup vegetable oil
- 1/4 cup red wine vinegar
- 1 teaspoon sugar
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Step 1
In medium size bowl, mix together oil, vinegar, sugar, oregano, chili powder, cumin, garlic, salt, and pepper. Set aside.
Step 2
Cut chicken into thin strips. Add to marinade, coating chicken well. Allow to sit for an hour up to 24 hours.
Step 3
In a large skillet, or wok, add 1 tablespoon oil, heat on high. Add chicken strips, cook until no longer pink.
Step 4
Add peppers and onions, cook until tender.
Step 5
Heat tortillas. Spoon chicken and peppers onto tortilla, add a small amount of cheese, and roll. Serve hot.
