Ingredients
- 3/4 cup, finely crushed graham crackers
- 1/3 cup, melted butter
- 3 3/4 cups, softened cream cheese
- 3/4 cup sour cream
- 3 tablespoons flour
- 3 egg
- 1 egg yolk
- 2 teaspoons vanilla
- 1 1/4 cups sugar

Step 1
Pre-heat oven to 400. Grease bottom and sides of 9 inch spring form cake pan.
Step 2
Crush graham crackers finely in a small bowl. Add melted butter and mix well. Pour into spring form pan and press down gently.
Step 3
In large bowl mix cream cheese and sugar together, until smooth. Add sour cream, and flour, mix well
Step 4
Gradually add eggs and vanilla, one at a time, gently FOLDING them into cream cheese mixture.
Step 5
Pour mixture into cake pan. Bake for 10 minutes, reduce heat to 200. Bake for 25 minutes. Turn off oven, open door and leave for 2 hours. For a more drier texture, leave door closed.

Cake should be cooled completely before removing cake pan.

Chef's Notes
Do not open oven door too often, as this can cool the cake down, and cause it to crack.
Best if allowed to sit over night in the refrigerator.
Allow to sit on counter for 20 minutes before serving.
