Ingredients
- 2 tablespoons butter
- 1/2 cup, diced onion
- 1/2 cup, diced mixed bell peppers
- 0.5, diced tomato
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 cup rice
- 1 cup water
- 1 tablespoon salsa
How To3 Steps
Step 1
Dice onions, bell peppers, and tomato, set aside.
Step 2
In medium sauce melt butter. Add tomato, onion, and bell peppers. Cook until onion and peppers are tender.
Step 3
Add spices, and rice. Mix well, cooking rice for about 2 minutes. Slowly add water and bring to a boil. Cover, and simmer for 25 minutes, or until rice is tender, and water has evaporated. Serve hot.
Chef's Notes
For the mixed bell peppers, I use red, green, and yellow. You can also add jalapeno peppers for an added kick.
Instead of fresh tomato can use a small amount of tomato paste, or tomato sauce. Replace the water with chicken broth for added flavor.
