Simple vegetable beef soup recipe, great for those cold winter days.

1 pound beef, cubed
2 cups mixed vegetables
6 potatoes, cubed
1 tomato, diced
1 onion, chopped
1 bay leaf
2 beef stock cubes
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
4 cups water
Brown cubed beef in a large skillet, then transfer to a large saucepan.
Cook chopped onion until transparent, then add to the saucepan.
Add potatoes, vegetables, tomatoes, spices, and water. Bring to a boil and simmer one hour until beef is cooked and potatoes are tender.
