2 tablespoons butter
1/2 cup diced onion
1/2 cup diced mixed bell peppers
1/2 diced tomato
1 tablespoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon ground cumin
1/2 cup rice
1 cup water
1 tablespoon salsa
Dice onions, bell peppers, and tomato; set aside.
Melt butter in medium saucepan; add tomato, onion, and peppers; cook until tender.
Add spices and rice; cook 2 minutes; slowly add water; bring to boil; cover and simmer 25 minutes until rice is tender and water evaporates; serve hot.
