Buttery, melt-in-your-mouth shortbread cookies rolled in powdered sugar. A classic holiday treat.

1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 1/4 cups flour
1/4 teaspoon salt
3/4 cup chopped pecans
1/2 cup powdered sugar (for rolling)
Preheat oven to 350°F.
Cream butter and powdered sugar together. Mix in vanilla.
Stir in flour, salt, and chopped pecans until dough forms.
Roll dough into 1-inch balls and place on ungreased baking sheet.
Bake 12-15 minutes until set but not browned.
While warm, roll cookies in powdered sugar. Let cool and roll again.
