Mildly spicy chicken with peppers, mushrooms and melted cheddar cheese in Tex-Mex style.

1 pound boneless skinless chicken breasts
1/4 cup green pepper, diced
1/4 cup red pepper, diced
1/4 cup yellow pepper, diced
1 cup mushrooms, sliced
1 tablespoon oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon chili powder
1/2 cup cheddar cheese, grated
Preheat oven to 350F. Coat baking dish bottom with oil.
Dice peppers and slice mushrooms. Set aside.
Place chicken in greased baking dish. Season with garlic powder, salt, pepper, and chili powder. Bake 20 minutes.
Add peppers and mushrooms. Bake 15 minutes longer.
Top with cheese and bake 5-10 minutes until melted and slightly browned. Serve hot.
