Light and fluffy roasted potatoes with a gentle golden brown exterior, perfect for accompanying roast dinners.

6 medium potatoes
2 tablespoons oil
2 tablespoons flour
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon oregano
Wash and peel potatoes. Cut in half or quarters depending on size.
Preheat oven to 375°F. Add oil to a large shallow baking dish and allow to get very hot.
Place potatoes in a saucepan, cover with cold water, add salt, and bring to a boil. Boil gently for about 5 minutes.
Drain potatoes and shake gently. Add flour and shake to coat.
Place flour-coated potatoes in hot oil. Season with garlic powder, salt, pepper, and oregano.
Bake for 15 minutes before turning. Cook another 15 minutes until tender and golden brown.
