Perfect summer dessert. No better way to cool down than with the tangy taste of lemons.

1 cup flour
1/2 teaspoon salt (crust)
1/3 cup plus 1 tablespoon softened butter (crust)
3 tablespoons cold water
4 lemons
1 1/2 cups sugar
1/2 cup softened butter (curd)
4 eggs
1/8 teaspoon salt (curd)
Preheat oven to 350°F.
Mix flour, salt, and butter until crumbly. Add cold water until dough forms.
Roll on floured surface and fit into pie pan. Poke holes and bake 10-15 minutes.
Zest lemons. Blend sugar with lemon zest. Mix in butter, then eggs one at a time.
Add lemon juice and salt. Cook on low heat, stirring constantly, until thick (15-20 minutes).
Pour into crust. Let set 1 hour, then refrigerate 24 hours.
