2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups milk
2 cups grated cheddar cheese
6 sliced potatoes
1/4 cup bread crumbs
Preheat oven to 350°F.
Peel and slice potatoes thinly, boil for 5 minutes, drain, and place in 13x9 baking dish.
Melt butter and mix with flour, salt, and pepper until bubbly.
Gradually add milk while stirring to prevent lumps; bring to boil and thicken.
Stir in 1½ cups cheese until melted; pour over potatoes.
Bake uncovered for 45 minutes.
Top with remaining cheese mixed with bread crumbs during final 15 minutes; bake until golden and potatoes are tender; let rest 5 minutes before serving.
