Crispy breaded chicken topped with tomato sauce and melted mozzarella, served on butter toasted buns.

4 boneless skinless chicken breasts
1/4 cup flour
1 cup bread crumbs
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon oregano
1/4 teaspoon Italian herbs
1/4 teaspoon parsley flakes
1/4 cup parmesan cheese
3 tablespoons melted butter
2 eggs
1/2 cup grated mozzarella cheese
1 cup tomato sauce
8 small buns
3 tablespoons oil
Preheat oven to 350°F and pour oil into glass baking dish.
Pound chicken to 1/4-inch thickness; cut each breast in half.
Set up breading stations: eggs, flour, and breadcrumbs mixed with butter and seasonings.
Coat each piece in flour, then egg, then breadcrumb mixture.
Bake for 30 minutes, turning halfway.
Butter and toast bun halves. Assemble with sauce, chicken, cheese; bake until melted.
