Baked potato wedges tossed with cheese, serve as a side dish or as a great late night snack.

4 large potatoes
2 tablespoons oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon oregano
1/2 cup cheddar cheese
1 teaspoon finely chopped parsley
Preheat oven to 450°F. Line baking pan with parchment paper.
Slice potatoes into wedges, soak in cold water for 30 minutes.
Drain and dry each wedge thoroughly.
Toss wedges with oil and seasonings.
Bake 30 minutes until golden brown, turning once.
Toss with cheese and parsley. Serve warm.
