One of my all time favorite 'healthy' snacks, Carrot cake with cream cheese frosting.

Ingredients

1 1/2 cups sugar

1 cup vegetable oil

3 eggs

2 cups flour

2 teaspoons cinnamon

1 teaspoon baking soda

1 teaspoon vanilla

1/2 teaspoon salt

3 cups grated carrot

1 cup chopped walnuts

8 ounces cream cheese, softened

1/4 cup butter

3 teaspoons milk

1 teaspoon vanilla (frosting)

4 cups powdered sugar

Instructions

Preheat oven to 350°F; grease and flour a 13x9 inch baking dish.

Beat sugar, oil, and eggs on low speed until blended.

Add flour, cinnamon, baking soda, vanilla, and salt; mix thoroughly.

Fold in carrots and nuts; pour into pan and bake 40-45 minutes.

Cool completely before frosting.

Beat cream cheese, butter, milk, and vanilla until smooth. Gradually add powdered sugar.

Frost cooled cake and refrigerate.
