Enjoy those hot summer days with this sweet, and creamy Banana Cream Pie.

1 cup flour (crust)
1/2 teaspoon salt (crust)
1/3 cup plus 1 tablespoon softened butter (crust)
3 tablespoons cold water
2 bananas
4 egg yolks
2/3 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt (filling)
3 cups milk
2 tablespoons butter (filling)
1 tablespoon vanilla
Mix flour, salt, and butter until crumbly. Add cold water until dough forms. Roll out and fit to pie pan.
Pre-bake crust at 375°F for 10-15 minutes until golden brown.
Beat egg yolks. Combine sugar, cornstarch, and salt with milk; cook over medium heat until thickened.
Temper egg yolks with hot mixture, return to pan, boil one minute.
Mix in butter and vanilla. Pour over sliced bananas in crust.
Refrigerate 2-3 hours until firm. Top with whipped cream before serving.
