This moist, cake like bread will have your mouth watering for more.

1 1/4 cups sugar
1/2 cup softened butter
2 eggs
1 1/2 cups mashed banana
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnut (optional)
Preheat oven to 350°F. Grease two loaf pans.
Mix butter and sugar; add eggs until well blended.
Stir in bananas, buttermilk, and vanilla; beat smooth.
Mix in flour, baking soda, salt; fold in nuts.
Pour into pans; bake about 1 hour until toothpick comes out clean.
Cool 10 minutes in pans, then remove and cool completely.
