Ingredients
- 0.5 pound, ground pork sausage
- 8 eggs
- 1 1/2 cups bread crumbs
- 1 teaspoon garlic powder
- 2 1/2 teaspoons ground sage
- 1 1/2 teaspoons oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Step 1
Place 6 eggs into medium sauce pan, cover with cold water, add a teaspoon of salt, cover. Bring to a boil, turn heat off and allow eggs to sit in hot water covered for 10 minutes. After 10 minutes, drain water and replace with cold water. Peel eggs, and set aside.
Step 2
In medium bowl, mix together pork sausage, 1/2 teaspoon garlic powder, 1/2 teaspoon oregano, 1/2 teaspoon ground sage, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
Step 3
In small bowl mix together bread crumbs, and remaining herbs and spices. Set aside.
Step 4
In small bowl, beat remaining two eggs. Set aside.
Step 5
It is best to set up an assembly line: eggs, sausage meat, egg wash, and then bread crumbs. Have a muffin tin ready with some oil in 6 of the cups.
Step 6
Take a small amount of sausage and flatten in your hand. Place one egg in the middle of sausage and carefully wrap the sausage around the egg.
Step 7
Place wrapped egg in the egg wash. Then cover in bread crumbs. Place in muffin cup.
Step 8
Once all eggs are wrapped and covered in bread crumbs, bake in the oven for 20 to 25 minutes at 350. Turning halfway through cooking. Allow to cool for 10 to 15 minutes before serving.
