Ingredients
- 6 medium potatoes
- 0.5, diced medium yellow onion
- 2, chopped celery stalks
- 2 tablespoons butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 chicken stock cube
- 4 cups water
- 1/2 cup milk
- 1 cup, cubed ham
- 3 tablespoons cornstarch
- 3 tablespoons cold water

Step 1
Wash, peel and cut potatoes. Cut them into 1 inch pieces. Dice onion, and celery.
Step 2
In large sauce pan add butter, onion, celery, garlic powder, salt, and pepper. Cook until onion is translucent.
Step 3
Add potatoes, chicken stock cube, and water, make sure the water covers the potatoes completely. Ham can be added, but it is optional. Bring to a boil, and simmer until potatoes are tender. Do not over cook. Add milk.
Step 4
In a small cup mix together cornstarch and COLD water until smooth. Slowly add to soup stirring quickly. Allow to simmer for 10 minutes or until thickened. Serve hot with grated cheddar cheese on top.
Chef's Notes
This potato soup recipe is very simple, and can be done in a short period of time. You can omit a few steps and make it even simpler. Such as cooking the onions and celery before hand. You also do not have to thicken, it is a personal choice, and I find it makes a heartier soup if it is.
