- 4 large potatoes
- 2 tablespoons oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon oregano
Topping
- 1/2 cup cheddar cheese
- 1 teaspoon, finely chopped parsley

Step 1
Preheat oven to 450. Line baking pan with parchment paper.
Step 2
Wash potatoes, slice lengthwise into wedges. Place into large bowl, and cover with cold water. Set aside for 30 minutes.
Step 3
Drain potatoes, and dry each wedge thoroughly with paper towels.
Step 4
In a large bowl toss wedges with oil, garlic powder, salt, pepper, and oregano, making sure to coat thoroughly.
Step 5
Place wedges on parchment paper on baking tray, making sure they are not touching each other. Bake for 30 minutes, or until golden brown on all sides, turning only once.
Step 6
In large bowl combine cheese and parsley. Once wedges are fully cooked, allow to sit for 5 minutes, and then toss with cheese mixture. Serve warm.
Chef's Notes
I used a white cheddar cheese, this made for a more melted, cheesy potato. However you can use any type of cheese you wish. The harder cheeses, such as Parmesan, will give a more powdery, dry effect.
